Today, Latina On a Mission is excited to bring you a Sabroso Saturday recipe submitted by a long time reader, Gabrielle Ocasio. Gabrielle is a single mother of two adorable sets of twins, who has learned how to create tasty meals that are also fast. Today she shares one of her secret weapons for Sabroso Saturday, a Giant Pancake Rice Cooker Recipe.
Gabrielle here! As a Mom of four, I was overjoyed when I discovered how to make pancakes in a rice cooker. One day, I stumbled across giant pancake photos online. They looked like cakes, so fluffy and delicious! I knew I had to try my hand at these giant pancakes the first chance I had.
For this recipe I used Aunt Jemima’s Buttermilk complete pancake mix. I tried an off brand pancake mix at first and found the pancake formed a thin crust, making it difficult to cut through. However, I didn’t have this problem with Aunt Jemima’s pancake mix.
After some trial and error, I discovered the brown rice setting on the rice cooker made perfectly giant, fluffy pancakes in about 15 minutes. After removing the giant pancake, I like to top it off with fresh fruit, honey, and cinnamon. The best thing about this recipe is the pancake cooks on its own, so you can utilize your time more efficiently!

Sabroso Saturday: Giant Pancake Rice Cooker Recipe
Prep Time: 5 minutes | Cook Time: 15 minutes| Servings vary based on size
Ingredients:
• 2 cups Pancake mix
• 1 1⁄2 cups Water
- Spray the rice cooker’s inner pot with a nonstick spray.
- In a mixing bowl, combine pancake mix and water. Whisk until all the large lumps have disappeared.
- Pour pancake batter into the rice cooker’s inner pot. Cook the pancake on the brown rice setting, this works best for pancakes. The giant pancake is usually done in 15 minutes.
Optional: Top your pancake with fresh fruit, honey, and cinnamon.
