It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health.
Earlier this week I went to the market and brought enough food to last at least a month (I hope!). Of course, all that food calls for some serious cooking and baking so I woke up extra early today to make homemade muffins! (Plus, I felt I needed to do something extra for my teen since he cleaned the fridge this week.)
I decided I would make Raspberry Lemon Yogurt muffins because they are simply sabroso / delicious! Pssst don’t tell the boys but I use lots of healthy ingredients, like oatmeal. I couldn’t get them to eat that of their own free will if my life depended on it so this is a great way to sneak it in. Devious, verdad / right?
When baking the muffins, I also made sure to use PAM because it’s NO STICK! Talk about easy clean-up, it’s the best! Just don’t tell the family. I find you get more brownie points if you let them think you slaved over a hot oven and did all the “hard” clean up.

Raspberry Lemon Yogurt Muffins
Ingredients
- PAM Original No-Stick Cooking Spray
- 1-1/2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1/2 cup firmly packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups yogurt
- 4 tablespoons Fleischmann’s stick
- 1/4 cup Egg Beaters Original
- 1 cup Raspberries (I use frozen – cheaper inmy area)
- 1 Teaspoon grated lemon peel
Preparation
- Preheat oven to 325ºF. Spray your baking dish, sides and bottom, with cooking spray. set aside.
- Blend together flour, oats, brown sugar, baking powder, baking soda, and salt in larger bowl.
- In another bowl, stir together the yogurt, butter, and Egg Beaters. Pour the yogurt mixture into the center of the dry ingredients. Stir until blended using a rubber spatula. Do NOT overmix. Fold in raspberries and lemon peel.
- Divide batter evenly into the muffin pan. Bake about 15 – 20 minutes. You’ll know its done when you can stick a toothpick into center and it comes out clean. .
- Remove pan from oven when done and cool for about 5 minutes. Remove from pan and place on a wire rak to cool further.
