Sabroso Saturday: Cinnamon Yogurt Muffins

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health!

I’m a brunch type of gal. I don’t normally roll out of bed at 7 am. In fact, I have to be pushed, prodded and pulled out of bed in the mornings! Yet for some reason, I love all things breakfast related. Hence, another breakfast type receta/recipe.

Over ten years ago, I discovered a cinnamon muffin recipe. At the time I was looking for something that I could make and leave out for my son in the mornings so he would let me sleep just a little bit longer. I have a few funny stories about my trial and error during those years, including a fire but I’ll save that for another day 🙂

In the meantime, rest assured these cinnamon yogurt muffins will net you a few extra hours of sleep in the mornings and isn’t that what all Moms crave?

Cinnamon Yogurt Muffins

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/3 cup butter (I use I Can’t Believe It’s Not Butter)
  • 1 6 oz Cup of Light & Fit Vanilla Yogurt – This is my preference but you can use anyone
  • 2 egg whites OR  1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup skim milk
  • Pam

Preparation

  1. Preheat oven and pregrease muffin pan.
  2. In a bowl, combine the flour, baking soda, yogurt, salt and cinnamon. Place to the side.
  3. In a large bowl, beat the sugar and the butter with an electric mixer till blended [or you can use a fork and muscle power!]
  4. Add the egg whites and the vanilla to the sugar and butter mix and blend well.
  5. Slowly start to add the flour mixture you had set aside and the milk. Mix well.
  6. Spoon the batter into the muffin pans – makes about 12 medium muffins.
  7. Bake until golden brown, which is about 15-18 minutes.

Serve with a cup of cafe/coffee or a tall glass of milk. ¡Buen provecho!

The recipe has evolved over time. I’ve changed or taken out several of the original ingredients and now add yogurt to the muffins. I like the Vanilla flavored Light and Fit but you can use any kind.  You can also play with the recipe adding bananas, blueberries, strawberries, and even nuts!  All in all the recipe takes about 30 minutes start to finish to make – 10 to prep and about 20 to bake. Easy peasy right? 😉

    I love breakfast foods but I HATE cooking breakfast. Give me lunch and dinner to cook and I’m a happy girl. LOL Thx for posting this. Sounds yummy. I’m a huge lover of cinnamon too 😉

    This recipes consists of some things I love…cinnamon, yogurt, muffins. It’s great to have some breakfast/brunch recipes that can give all Mamis some much needed extra shuteye! 🙂

    I like muffins – especially since my teenager can follow recipes, or even make them in advance and reheat. Can’t wait to make these and have some apple cider. (Cinnamon and apple cider, just go together for me)

    You sound just like me. I would stay in bed forever, but I love breakfasty stuff. Especially baked goods. SO send me your extras when (as if) you have any! YUM! And geez, a fire? Not good. Looking forward to that story one of these days.

    Yum! That recipe looks amazing just by looking at the picture and reading whats in it. I have never seen a recipe that calls for yogurt in a muffin. I am going to try this sometime this week. Thanks for the great recipe!

    My two year old and I have these muffins in the oven right now! However, I just guessed at a temperature for the oven. Not sure if I’m just missing it, or what, but can’t find the temperature listed.
