It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health.

This past week, the boys and I tried a Pam receta/recipe, I received when I began working with Pam. It came with my initial package and contained PAM, a Pyrex baking pan and more [To win your own PAM prize pack click HERE - 5 Winners]. Yet as cool as that was, I have to tell you this recipe was cooler! Why? Because it was super easy to make, the boys LOVED it, and it made enough for three days!


I love being able to cook ahead. It gives me time in the week to relax. Less stress and no mess always makes for a happy Mommy, verdad / right?

Kickin’ Baked Rigatoni


Ingredients


•PAM Original No-Stick Cooking Spray

•1 package (16 oz) dry rigatoni pasta, uncooked

•1 pound Italian pork sausage links, casings removed

•1 medium onion, chopped

•1 can (28 oz) Hunt’s Crushed Tomatoes

•2 cans (10 oz each) Ro-Tel Hot Diced Tomatoes with Habaneros, undrained

•2 cups shredded part skim mozzarella cheese, divided


Preparation


1.Preheat oven to 375ºF. Spray your baking dish, sides and bottom, with cooking spray. set aside.

2.Cook pasta according to package directions. Do not over-cook.

3.While pasta is cooking, cook sausage and diced onion in large non stick skillet over medium high heat until sausage is crumbled and no longer pink. make sure to stir frequently. Drain.

4.Add both crushed and undrained tomatoes to sausage mixture. Mix well and bring to a boil. reduce heat to medium -low, cover and simmer for about 15 minutes. Make sure to stir occasionally!

5.Drain pasta and return it to pan. Add sausage mixture and 1 cup of cheese. Mix lightly. Spoon onto baking dish. Top with remaining 1 cup of cheese.

6. Cover with aluminum foil sprayed lightly with cooking spray, making sure you put the spray side down. Bake about 20 minutes pr until hot.

7. Serve with a side dish (rice, veggies, etc.) and enjoy!
