Sabroso Saturday: Authentic Sofrito Recipe

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health. Today we’re going to share an authentic sofrito recipe!

Over the years, I’ve had many people compliment my Latin food. As I contemplated what is it that makes my food stand out, sofrito came to mind.

When I cook, there is one ingredient that is always included: SOFRITO! It can’t be just any sofrito, it has to be my sofrito. My sofrito contains herbs that suit my family’s taste buds, just as someone else’s sofrito suits theirs.

Why does sofrito differ from person to person?

According to Wikipedia, “Sofrito is a combination of aromatic ingredients which have been cut in very small pieces, and slowly sauteed or braised in cooking oil for 15-30 minutes.” The combination of ingredients and herbs, however, is entirely up to the person making it and that is why it differs from person to person!

My sofrito is a blend of veggies and herbs and NO OIL. It can be added to rices, beans, and meats. It’s tastier than the frozen version found in supermarkets, simple to make, and will change the sabor/taste of any recipe you make. Ingredients can be found in the produce section of your local supermarket or at any Farmers Market. Just make sure you have a blender on hand, you will need it to blend the ingredients together!

Ingredients

  • Head of garlic, peeled, and roughly chopped.
  • 2 green bell peppers, seeded, and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 bunch of cilantro
  • 1 yellow onion, peeled and chopped
  • 1 red onion, peeled and chopped
  • 3 bullion cubes
  • 2 tablespoons of apple cider vinegar
  • Fresh oregano
  • 1/2 cup water
  • 1/2 tablespoon salt
  • 1/2 teaspoon black pepper

 

Preparation

  1. Put everything in a blender and blend until smooth.  Place blended mixture in a glass bottle and refrigerate. Simple as that!

 

To Use in Recipes

  1. Beans, soups and/or stews:  Add a generous amount when cooking. Amount used is based on taste and size of meal.
  2. Meats: Season meats with sofrito and marinate.

Just a final note….The reason why I call this MY sofrito, is because its just that….mine. You can make it YOURS by taking out or adding any other ingredient of your choice. Some examples might be yellow bell peppers, cumin, coriander, parsley, thyme, basil. The choices are endless so get creative!
