#SabrosoSaturday: Baked Plantain Chips

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health.


My mother grew up in an era when women were establishing themselves. They no longer defined themselves as homemakers and caregivers. In fact, it distressed them to be called so! As a result, my mother avoided any duty that lumped her into those roles, including cooking. I didn’t witness a woman’s love of cooking till I was in my teens but by then my mother’s attitude had been instilled.

As I got older and moved out on my own, I realized I was at a great disadvantage. I didn’t know how to shop for food and I didn’t know how to cook. Thankfully, ,I had wonderful friends who would did it for me! Even my first candlelight dinner with my son’s father was cooked by a friend. All I did was place it on the plates.

As I’ve grown, I’ve learned how much I truly missed. The thrill of making a home cooked meal is intoxicating! The joy of seeing a loved ones eyes light up as they bite into a morsel you created can not be replaced by a store brought meal. As my little one told me just this week, “It’s the love you put in it that makes it special.” He’s right. That love can’t be brought but it can be learned. I am a testament to that!

So today, I bring you a versatile side dish that can be made in the blink of an eye. Although normally fried, I bake it. It can be used as a side for pasta dishes, seafood, chicken and salads. It can also be eaten alone as a snack while watching a movie or spending time with friends. It goes perfectly with milk or with a bottle of sweet wine.

Baked Plantain Chips


  • 2 Green Plantains
  • Sea salt (to taste)
  • Pepper (to taste)
  • PAM


 1. Cut the ends of the plantain off, as shown below.



2. Slice the plantain in the center, as shown below.


3. Peel the plantain skin off, as shown below. Remove all the skin and toss.


 4. Slice the plaintain into thin slices, as shown below.  


5. Spray PAM onto a baking tray. Arrange sliced plantains in the tray, making sure they are not stacked on top of one another. Spray PAM on top of the plantain and season to taste.


6. Bake at 425 degrees for 15 minutes on one side. Turn and bake for another 10-15 minutes depending on how crispy you like the plantain.

7. Remove, place on a platter and enjoy!

    Yum! Last year I came across a similar recipe from Africa using unripe green bananas. They are really good! I’ll have to try with green plantains now.

    LOVE THIS! Any excuse for plantains is a good reason for me – and baking is probably safer than splattering in a pan. Can we use some mashed garlic for dipping?

    I love platanos! Never tried making chips, but love to eat platanutres! Do these come out similar to tostones?

    I have to admit. I loved every bit of these. I thought they were going to taste bland but to my surprise they tasted better than fried. I also played with the thickness of them and love the fact that I can slice them really thin and take them along as a snack/chip or a thicker and have as part of dinner. Thank you!

    Yum, I have never tried these before but they look so yummy. Next time I go to the grocewry store I am going to buy some and make them. I like that you bake them instead of frying that helps make them even mnore heatlhy, thanks for sharing!!

    You know I have seen plantains but never knew what to do with them… never have baked fried or done anything before. I like making my own snacks and I am wondering if you can sprinkle either sugar or salt on them?

    Thank you for sharing this recipe – I appreciate your comments about growing up in a time when cooking, or doing housework in general was not valued. Love the simplicity of fixing this healthy food and truly regret that I’m left distressed that I haven’t known how easy it would be to prepare.

    I totally love these chips! Such a wonderful idea! You could also dip plantain in sweet flour batter and fry them up and serve as fritters!

    Oh these look so good! I had these for the first time a month or so ago while eating out…and loved them. I would love to make them at home…cant wait to try these!
