Sabroso Saturday: Chocolate Rice Pudding Recipe

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health!

This week’s Sabroso Saturday features Chocolate Rice Pudding and contains chocolate milk. The recipe is a  wonderful variation of the Arroz con Leche/Spanish Style Rice Pudding I grew up with in my family.  The chocolate milk also seems to boil over well with the kids (mine loved it!). Even better, it helps them meet their daily calcium recommendations while also providing them with vitamins A, D and B12, and potassium! 

I also like the simplicity and ease of the Chocolate Rice Pudding recipe. I can easily double it and serve it to a larger group, which I plan on doing during the holidays. I would also serve smaller servings in Dixie cups (4 oz vs. 8 oz) on a decorative platter. 

Note: You can reduce the calories in this recipe even further by using  fat free condensed milk instead of the regular condensed milk.

  

Chocolate Rice Pudding
Makes 5 (1 cup) servings
Nutrition information per cup
354 calories; 4.6g fat; 2.7 saturated fat; 10.5 g protein; 289 g calcium

Ingredients:

  • 3 cups low fat chocolate milk
  • 3 cups of cooked rice
  • ½ cup sweet condensed milk (use fat-free to decrease calories)
  • ½ cup raisins
  • ½ tsp cinnamon
  • 1/8 tsp ground cloves
  • 1 tsp orange zest
  • Raisins and a sprinkle of cinnamon for decoration* 

 

Preparation:

  1. In a pan, mix ½ tsp of the orange zest with the rest of the ingredients.
  2. Cook ingredients at medium heat until it begins to simmer.
  3. Once simmering, decrease to low heat and cook for approximately 10-15 minutes. Make sure you stir frequently!
  4. Add the rest of the orange zest when the rice is almost ready.
  5. Before serving, add raisins to the top and sprinkle with cinnamon.

 

You can serve the pudding warm or cold.  To serve cold, let stand for 15 minutes before refrigerating for an hour or so.

*The amount of raisins and cinnamon used in the recipe is based on taste. You can add more or none at all! Its up to you. I used about 1/2 cup of raisins and about 1/2 teaspoon of cinnamon.

Daily recommendations: 3 cups of low-fat or fat-free milk or equivalent milk products for those 9 years of age and older; 2 cups of low-fat and fat-free milk or equivalent milk products for children 2-8 years old.

    Carolyn & Melinda: While making the pudding it brought so many memories of me playing with my cousins while the mujeres/women cooked in the kitchen and the men played dominoes! Those were good times!
    I’m hoping this chocolate variation becomes a family tradition, that the boys will associate with me when they have kids of their own. 🙂

    Yummm! This is a great varietion…and pretty healthy, too! Actually Arroz con dulce is a great thing to make if you have some one in your house not feeling well, the rice is soothing to the digestive tract and you can use Soymilk if you need to! (Plus it’s a FABulous comfort food!)

    I know it’s strange, but I don’t really like rice pudding. Adding chocolate to it may change that, though 🙂
