Sabroso Saturday: Vegan Stuffed Peppers

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health!

I try to make at least 2 non-meat meals per week. I find this helps me save some money (and my waistline!).

For these meals, I usually make some type of fish, a savory omelet or a veggie dish. This week I will feature one of the veggies dishes that I make, a vegetable stuffed pepper. I know it sounds weird doesn’t it – like stuffing a chicken with a chicken right? – but it’s actually good! Its also healthy but don’t let that fool you, it packs a punch! 

The recipe is simple and quick to make.  I use left over beans since it keeps me from throwing them, and my hard earned dollars away. Since you are using left over beans that have already been seasoned you don’t have to add much more to the recipe which makes it easy peasy.  This is also a basic recipe so don’t be afraid to play around with the seasoning and change it up to suit your families needs!

 UPDATE: Thanks to one of my readers I learned that Vegan meals would not include cheese. So if you are preparing the recipe below as a Vegan dish, remove the cheese.

Vegan Stuffed Peppers

6 medium sized bell peppers (green, red or yellow- I like green)

  • 2 cups cooked beans
  • 3/4 cup shredded mozarella cheese
  • 1 small onion, minced
  • 1 large clove garlic, minced
  • Black pepper and cayenne pepper to taste
  • 1 tablespoon of olive oil

 

 

  1. Preheat oven to 375°
  2. Cut the tops of the peppers and take out the seeds. 
  3. Boil the peppers in a large pot for about 5 minutes. Remove peppers and place them upside down on paper to drain.
  4. In a bowl combine the other ingredients. Stuff the peppers with this.
  5. Place the stuffed peppers in a baking pan UPRIGHT. Pour a little bit of water in the pan and bake uncovered. 
  6. Bake peppers for about 20 minutes.

 

That’s it! They’re done! Now serve it with rice and you have a meal. 🙂

    We’ve been trying to add more vegetarian items to our menu. I used to be a vegetarian years ago, but my first pregnancy broke me of that habit. I craved red meat! lol

    For health reasons and trying to limit our grocery bill spending, we’ve been eating more veggie meals. This sounds really good! I’ll add it to the menu rotation! Thanks!

    Oh thank goodness there’s CHEESE in there. My daughter will eat just about any kind of vegetable if there’s cheese involved. I won’t be calling it a vegan recipe, just say it’s something to eat instead of chicken (which we seem to do 4 times a week).

    You can always use vegan cheese – I recommend Daiya. It has a tapioca base so it stretches and melts like dairy-based cheese. 🙂 Yum!
