Sabroso Saturday: Salmon with Pineapple Salsa

It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health!

A few weeks ago I mentioned that I received the George Foreman Evolve Grill for review and I have to say its my newest passion! 

This week’s recipe, the Salmon with Pineapple Salsa, is one I found on the George Foreman Recipes website. I try to incorporate fish in our diet at least once a week because of the nutritional value. According to Wikipedia, “… it contains high protein, high Omega-3 fatty acids, and high vitamin D content.” The high Vitamin D content is especially important for older adults since it combats osteoporosis. In fact, Vitamin D with exercise has been said to stop or even reduce osteoporosis, which is great for me since I have been told I may develop osteoporosis.

For this recipe, I used frozen salmon that was on sale at the supermarket . I am sure it would have tasted MUCH better with fresh salmon but it was still tasty enough to satisfy our palette! If you make it with fresh salmon, let me know what you think!

Grilled Salmon Salad

Ingredients:

  • 2 cups coarsely chopped fresh pineapple
  • 1/2 cup chopped red sweet pepper
  • 1/4 cup finely chopped red onion
  • 3 tablespoons lime juice
  • 1 tablespoon snipped fresh cilantro or chives
  • 1 tablespoon honey
  • 1 small fresh jalapeno pepper, seeded and finely chopped
  • 1 1-pound fresh skinless salmon filet, 1 inch thick
  • 1/4 teaspoon ground cumin

 

Directions:

  1. Use a medium bowl to combine pineapple, sweet pepper, onion, 2 tablespoons of the lime juice, the cilantro, honey, and jalapeno pepper. Cover and refrigerate up to 2 hours.
  2. Rinse filets. Pat dry with paper towels. Cut into 4 serving pieces. Brush both sides of fish with the remaining lime juice and sprinkle with cumin. [Note, if you use individually wrapped frozen salmon as I did, you need only brush all sides of the fish with the remaining lime juice and sprinkle with the cumin.]
  3. Place on the grill, tucking under any thin edges. Cook for 4 to 6 minutes, until flakes easily. Serve with salsa.

Serves: 4

    I really like this recipe! I like Salmon but have never tried with pineapple salsa. Such a tropical flavor. I LOVE the George Foreman Evolve Grill! Its been so wonderful and easy to use with the digital settings. I’m going to try this recipe too. Thanks!

    I always like seafood, and tropical flavors too. My daughter has issues with the texture, so maybe we can negotiate and do it with pork chops or chicken breast.

    As much as Ilove pineapple it’s crazy I’ve never had pineapple salsa. I’ve had mango salsa, but I’m betting I would like this one more.

    Salmon is about the only fish besides tuna in oil in a can that I will eat. This looks so delish and healthy!! YUM!
