It’s Sabroso Saturday (Translation: Tasty Saturday)! The day when we share recipes that have helped us stretch our budget, our imagination and our taste buds, without sacrificing our health.

Like Migdalia, aka Ms. Latina, I’ve been trying to lead a healthier lifestyle. Con una familia/ with a family, I always have to think of my son and husband because I refuse, REFUSE, to cook different meals for each one of us. Plus, it will get them eating healthier too.

So many people say you have to sacrifice sabor/taste when eating healthier but that’s a mentira/lie! I couldn’t eat a flat meal. I want a meal that satisfies my hunger and taste buds so why shouldn’t I have that? Why shouldn’t YOU?

Fish is always a good place to start. It’s light on the stomach, easy to make and will melt on your tongue. Yes, mujeres/ladies this is the meal to make when you want your family to say YES to anything you ask! :)

Grilled Salmon in Papaya Mint Salsa

Grilled Salmon in Papaya Mint Salsa

Ingredients

  • 1 medium papaya, peeled, seeded and chopped
  • 1/4 cup chopped red onion
  • 1/4 cup fresh mint leaves
  • 1 tsp finely chopped chipotle pepper in adobe sauce
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • Salmon fillets

Preparation

  1. In a small bowl, combine the papaya, onion, mint, chipotle pepper, oil and honey. Cover and refrigerate for at least 30 minutes or until ready to make.
  2. Grill salmon to taste and serve with salsa.

 

If you want to add a side dish, I think the  Grilled Salmon in Papaya Mint Salsa goes great with wheat germ, brown rice or couscos.
